Puri is one of the most common north Indian breads, often eaten on its own with chai, either plain or sprinkled with sugar. It also goes well with chole (page 100), rajma (page 102) and aloo sabzi (page 105). The dough can be challenging to work with as it is dry and crumbly. Keep your hands and the dough well oiled, work quickly and do not overwork the mix. The result will be beautiful, crisp breads ready in under an hour.
