  • 180g peeled and very finely sliced waxy potatoes (approx. 2 medium potatoes)
  • 120g unsalted butter
  • 200g peeled and very finely sliced onion (approx. 3 medium onions)
  • 750g cleaned and very finely sliced leek (approx. 15 leeks)
  • 1kg vegetable stock (p.44), or white chicken stock (p.38), warmed
  • 100g double cream
  • 50g semi-skimmed milk
  • Salt
  • Chives
