- 400g peeled and finely sliced onion (approx. 6 medium onions)
- 2 cloves of garlic, peeled and finely chopped
- 4 sprigs of thyme, leaves picked
- Groundnut or grapeseed oil
- 6 slices of streaky bacon, cut into lardons
- 20g dry madeira
- Salt and black pepper
