Green tea and lime palate cleanser
Ingredients
- 200g fructose (fruit sugar)
- 15g pectin powder
- 30g green tea leaves
- Zest of 2 limes, removed with a peeler
- ½ tsp salt
- 1kg water
- 200g lime juice (approx. 10 limes)
- 120g egg whites (approx. 4 large eggs)
- 50g vodka
- ½ tsp matcha green tea powder (specialist ingredients, p.394)
- 90g fructose (fruit sugar)
- 45g lime juice (approx. 2–3 limes)
- 450g cold tap water
- 1 tbsp matcha green tea powder, wrapped in muslin, for dusting
