Tiramisu
Ingredients
- 3 large eggs
- 75g unrefined caster sugar
- 300g mascarpone
- 200g whipping cream
- 60g marsala
- 1.5g leaf of gelatine (cut with scissors), softened in a little cold water
- 24 sponge fingers
- 150g ground coffee brewed in 400g water
- 100g marsala
- 250g dark chocolate, chopped (minimum 60% cocoa solids)
- To assemble
- 75g grated dark chocolate
- 50g cocoa powder, mixed with 50g grated chocolate
