Gebakken harder met sambalsaus

Ingredients
- 2 kemirinoten
- 1 tl korianderzaad
- 1 tl witte peperkorrels
- 3 sjalotten, in fijne plakjes
- 3 tenen knoflook, in fijne plakjes
- 5 rode lomboks, in fijne ringen
- 5 rode rawits, in fijne ringen
- 2 cm kurkumawortel, in fijne plakjes
- 2 cm gemberwortel, in fijne plakjes
- 1 tl trassi
- 1 tl zout
- Olie, om in te bakken
- 4 cm laos, in fijne plakjes
- 1 stengel citroengras, gekneusd en in een knoop gedraaid
- 5 limoenblaadjes
- 2 salamblaadjes, gekneusd
- 3 tomaten, in kleine parten
- 1 el tamarindepulp, 2 min geweekt in
- 2 el heet water
- 1 tl palmsuiker, fijngesneden
- 400 ml dunne kokosmelk
- 4 harderfilets (van ca. 200 g per stuk)
- Zout en peper
- 10 g citroenbasilicum (alleen de blaadjes)
