Ingredients

  • 300g dark chocolate (around 65%), roughly chopped
  • 25g cocoa powder
  • 150ml hot coffee or water
  • 100g unsalted butter, well softened
  • 2 tbsp vegetable oil
  • 150g soured cream
  • 250g golden (or regular) granulated sugar, plus 2 tbsp for sprinkling
  • 3 eggs
  • 175g plain flour
  • ½ tsp fine sea salt
  • 1½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • Cinnamon rum cream (optional)
  • 250ml double cream
  • 40g icing sugar
  • 1 tsp ground cinnamon
  • 1½ tbsp dark rum (or 2 tsp vanilla bean paste or extract)
