  • 200g fructose (fruit sugar)
  • 15g pectin powder
  • 30g green tea leaves
  • Zest of 2 limes, removed with a peeler
  • ½ tsp salt
  • 1kg water
  • 200g lime juice (approx. 10 limes)
  • 120g egg whites (approx. 4 large eggs)
  • 50g vodka
  • ½ tsp matcha green tea powder (specialist ingredients, p.394)
  • 90g fructose (fruit sugar)
  • 45g lime juice (approx. 2–3 limes)
  • 450g cold tap water
  • 1 tbsp matcha green tea powder, wrapped in muslin, for dusting
