Ingredients

• 100g peeled and finely sliced banana shallot
• 2 cloves of garlic, peeled and sliced
• 15g sprigs of thyme, tied together with string
• 150g dry madeira
• 150g ruby port
• 75g white port
• 50g brandy
• Groundnut or grapeseed oil
• 15g peeled and finely chopped banana shallot
• 100g finely chopped button mushrooms
• 1 sprig of thyme, leaves finely chopped
• 10g dry madeira
• Salt and black pepper
• 450g unsalted butter, cubed, at room temperature
• 500g finely sliced button mushrooms
• 100g mushroom stock (p.45)
• 4 large eggs
• 10g salt
• Unrefined caster sugar, for the top
