Chocolate cake
Ingredients
- 300g dark chocolate (around 65%), roughly chopped
- 25g cocoa powder
- 150ml hot coffee or water
- 100g unsalted butter, well softened
- 2 tbsp vegetable oil
- 150g soured cream
- 250g golden (or regular) granulated sugar, plus 2 tbsp for sprinkling
- 3 eggs
- 175g plain flour
- ½ tsp fine sea salt
- 1½ tsp baking powder
- ½ tsp bicarbonate of soda
- Cinnamon rum cream (optional)
- 250ml double cream
- 40g icing sugar
- 1 tsp ground cinnamon
- 1½ tbsp dark rum (or 2 tsp vanilla bean paste or extract)
