Ingredients
- 100 g hele, rode chilipepers
- 30 g hele scotch bonnet-chilipepers
- 100 g milde olijfolie
- 50 g ui, gepeld, in grove stukken
- 30 g knoflook, gepeld, in grove stukken
- 10 g gemberwortel, geschild, in grove stukken
- 5 g gedroogde cascabel- of pasilla-chilipepers, steeltjes en zaden verwijderd
- ½ kaneelstokje, doormidden gebroken
- 3 g gemengde peperkorrels
- ½ extra rijpe papaja, geschild, pitten verwijderd, in blokjes van ¾ cm (300 g)
- 35 g tomatenpuree
- 30 g rode palmolie (zie blz. 20)
- 30 g rijstazijn
- 5 g fijn zeezout
- 30 g citroensap
- 2 theel. ahornsiroop
- 1 limoen, voor erbij
