Ingredients
- 1 pak bananenbladeren
- 2 eetl. chilipeper-gembertempero (zie blz. 30, of opmerking)
- 2 limoenen, voor erbij
- Pamonha
- 500 g maiskorrels uit de vriezer, ontdooid
- 120 g snelkookpolenta of maismeel
- 100 g volle kokosmelk (uit blik, niet uit een pak; goed geschud voor gebruik)
- 60 g ui, gepeld, in grove stukken
- 30 g kokosolie, plus extra om in te vetten
- 1 theel. fijn zeezout
- ½ theel. bakpoeder
- ½ theel. gemalen komijn
- 40 draaien uit de pepermolen
- Krabtopping
- 1 rijpe tomaat, zaden verwijderd, fijngesneden (80 g)
- 2 eetl. kokosolie
- 5 g bieslook, fijngesneden
- Geraspte schil van 1 biologische limoen
- 1 theel. tomatenpuree
- ¼ theel. fijn zeezout
- 50 draaien uit de pepermolen
