What the Turks can do with simple bulgur wheat is always pretty impressive to me. This dish makes a great cold accompaniment to a meal and is usually served as part of a big Turkish feast, but I like to serve it with grilled chicken to make a meal, or spooned into some flatbread or a tortilla wrap with a little feta cheese for a great sandwich. You can also serve it with Gem lettuce and use the leaves to scoop it up. Kisir can be spicy or not, but this version packs plenty of punch, so omit the chilli if you prefer.
